This is not really a recipe, just an idea for supper!

Chicken wings of your choice

Hot sauce of your choice mixed with tablespoon of pepper and teaspoon of garlic powder

Toss wings in sauce and grill until completely cooked or bake in oven on 350 for 1 hour 

Lettuce, mushrooms, onion, avocado, tomato, blue cheese crumbles and your choice of dressing...if I'm not making homemade dressing I really like the OPA Greek Yogurt dressing, blue cheese, ranch or dill!

Recipes Below:

Fiesta Casserole:
Cook brown whole grain rice (however you want, boil or microwave)
Cook black beans (can or bag)
Use canned chicken or cooked chicken breasts and shred
Mix salsa of your choice, shredded chicken breasts and Greek yogurt (as a sour cream substitute)
Layer all the ingredients:
Spread rice in baking dish
Layer black beans on top of rice
Layer chicken/salsa/Greek yogurt mix on top of black beans
Sprinkle top with choice of shredded cheese
Bake in the oven for 20 minutes on 350!
Store in fridge and re-heat leftovers!

Bacon Ranch Cheddar Chicken Salad:
Shred canned chicken or cooked chicken breasts
Mix chicken with 2 tablespoons of mayonnaise
Add a pack of Ranch Dips Powder, shredded cheddar cheese and bacon bits
Mix all together and serve with crackers or tortilla chips!
Store in fridge

Peanut Butter and Jelly Paninis
Make a PB&J sandwich the way you like it
Add a little butter to the outside pieces of bread
Press in panini press, George Foreman Grill or on the stove as if you were making a grilled cheese!

Zucchini Noodles and Homemade Sauce

This is super easy and fun to make!

What you need: (this is for 3 servings)
4 Zucchinis
2-3 Tomatoes 
1/2 cup Mushrooms
1/4 of an Onion
1 tablespoon pepper
1 tablespoon garlic powder
Coconut oil


Wash and dry Zucchinis


 Cut all ends off of each zucchini


 Use a Veggetti or some sort of veggie peeler to make zucchini noodles
I really love the Veggetti, I found mine at Ross for $6.99
You can find at Wal-Mart, online on Amazon or www.buyveggetti.com


 Your Zucchini will begin to look like this...


 The Veggetti comes with this topper to help push the veggie through so you can use as much of it as possible, see below:


 Put about a tablespoon of coconut oil in a pan and heat on medium heat.


Once coconut oil is melted, add zucchini noodles and some pepper (to taste)


 While zucchini noodles are cooking, make our sauce.  
Here is what you will need:


 I'm using this Cuisinart Food Processor, which is awesome!


 But if you don't have a food processor, you can use something as simple as this smoothie blender.
Yes, you will have to chop up the veggies a lot more before you put them in this.


 Add tomatoes and process until tomatoes are in small chunks.


 Add mushrooms and blend some more.


 Add onion and blend veggies together a little more.


Now add tablespoon of garlic powder, pepper, and coconut oil.



 Blend until sauce reaches your desired texture.


 Add the amount of sauce you want to use for that meal to a pot and heat up on stove.


 Bon Appetit!


 Enjoy with a glass of Shiraz!


 Store leftover zucchini noodles and sauce separately and enjoy again!

Simple Home Office

I have a somewhat odd space in my house that I could not really figure out what to do with.  I have been wanting a home office and a nice little spot to blog!  So...this was a "dog living room"...Yes that's right, a living room just for my dogs.  It just did not look the way I had imagined AND the dogs always were in my living room with me; therefore it was kind of a wasted space.  Here are pictures of the before and after and just an idea if you are looking to make a simple home office!  Hope you enjoy!

Mermaid Shrimp Cocktail Salad

Shrimp Cocktail with a twist!
The amount of ingredients is based off of serving 6 people.

What you need:
Shrimp (1 pound)
2 bell peppers (chopped)
Cilantro (to your liking, I like A LOT)
Black beans (1 can or 1/2 pound bag)
Tomato (1-2) sliced
Cocktail sauce (optional)

Boil shrimp until pink and let cool, lay to side
Depending on if you use canned black beans or dry...
In mixing bowl pour 1 can black beans or your cooked, former dried black beans
(If using dry black beans, use 1/2 of a 1 pound bag.  Bring 2 quarts of water to a boil, add black beans, turn temp. to low and let black beans simmer for 1-2 hours or until tender).
Add chopped bell peppers and sliced tomatoes.
Cut up cilantro and add.

Gently mix black beans, bell pepper, tomato and cilantro together.

Use goblet or glass of your choice and add salad into the goblet.
Slice cold shrimp about half-way down the middle and add around goblet.
Place on small plate with cocktail sauce on the side!

Don't throw away your leftovers!!!

Add Feta or Blue Cheese to the salad mix and re-purpose your leftovers!
If you have shrimp left over (why would you?) cut it up and add it as well!

What a nice, refreshing and easy lunch!
